Roasted Red Pepper Greek Yogurt Hummus

Ingredients For This Mediterranean Recipe

2/ 3 garlic cloves

6-ounces roasted red peppers 


¼ cup plain or Greek yoghurt

16-ounces can of chickpeas, drained and rinsed

1 tbsp. extra virgin olive oil

3 tbsp. tahini

1 tsp lemon, juiced

You can use parsley leaves, Kalamata olives, roasted red peppers, paprika, and olive oil. 

How to Prepare:

Start with putting all the ingredients together in the blender. Leave the olive oil aside for some time now. Blend the Hummus for at least 30 seconds, then add 1 tbsp. of olive oil and mix it in the blender for one more time. Adjust the salt and seasoning according to your tastebuds. Now, serve the Hummus in a bowl, and garnish with fresh parsley leaves, olives, chopped roasted red peppers, and olive oil. Serve the pita and the vegetables.

Pan-Roasted Mediterranean Potatoes

Ingredients For This Mediterranean Recipe

1 tsp thyme, chopped

1/4 cup caramelized onions

1 tbsp. extra virgin olive oil

2 pcs garlic, minced

1 tbsp. rosemary, chopped

1 lb. baby potatoes, diced

salt, to taste

1 tbsp. parsley, chopped

1/8 cup crumbled feta cheese


How to Prepare:

Preheat the oven till 400 F or 200 C. Now, take a large bowl, and place the potatoes in the bowl, along with olive oil garlic, rosemary and thyme. Toss all the ingredients together. Now, you have to spread them in a single layer in the pan. Season with salt. Now, top it with the caramelized onions. Now, bake for 20-25 minutes. You can prick them with a fork. Now, allow it to cool it and top with feta cheese and Italian parsley.
